A few days ago I watched Julia Roberts in the movie Eat, pray, love, how she enjoyed delicious tomato spaghetti somewhere in Italy. I just HAD to make them myself …
Here’s my recipe … and they are really divine 🙂
For tomato sauce: saute 1 onion finely chopped in 2 Tbsp olive oil. Add one grated carrot (could also add a finely chopped piece of celery) and 2 cloves of minced garlic. Fry for a minute, then add 1 Tbsp of tomato paste (concentrate) and 2 cans of tomatoes, finely chopped. Add 1 Tbsp chopped fresh basil (or 1 tsp dried), 1 tsp sugar, 1 tsp Bio Mediterranean salt and cook on low heat untill the sauce thickens (about 15 minutes).
Mix with spaghetti and leave for a minute, let the tastes blend. Generously sprinkle with Parmesan cheese.
